AACC Culinary Chef and Student Earn Awards at Culinary Competition


August 2013 - An instructor and a student in Anne Arundel Community College’s Hotel, Culinary Arts and Tourism Institute (HCAT) received culinary awards in an American Culinary Federation-sanctioned culinary competition at Stratford University hosted by the Greater Baltimore Chefs Association and Nation’s Capital Chefs Association.

HCAT Chef John Johnson of Pasadena won first place in the Contemporary Category with his “Maryland’s Summer Bounty”-themed entrée plate featuring baked rockfish with crab mousseline and vin blanc sauce, succotash of a sweet corn medley and lima bean puree, grilled summer squash, citrus tomatoes and corn bread.  Each competitor had one hour to prepare four plates of their signature dish while being evaluated on taste, nutritional value, presentation, organization and sanitation. Chef Johnson scored a high silver medal with his entry.

HCAT student Christopher Wroblewski of Bowie won third place in the Mystery Basket category. Each competitor received the same basket of different foods and had to incorporate them into their menu. They then had three hours to prepare a four-course meal of four plates each. Competitors were scored on their creativity, taste, menu development, organization and sanitation. Wroblewski competed against industry professional chefs and earned a bronze medal for his efforts.

HCAT students Karen Eaton of Annapolis, Stephanie Silva of Belcamp and Jessica Numbers of Bel Air volunteered and assisted with the ACF competition.
