HCAT Chef's Club: Iron Chef Success!

HCAT held its second Iron Chef Competition on April 13, 2011.
The competitors this semester were:
  • On Team 1: Chris Willis, Kate Quinn, Chris Galanakis
  • On Team 2: Darlene Proctor, Matt Reed, Heather Tompkins

Student Judge: Nicole Mullens

Each team was tasked to come up with three course meal in which each course featured cucumber as the secret ingredient.

Team One made a cold cucumber soup with Aqua Fresca Drink appetizer, a Seared Rock Fish with Lemon Ginger Brown Rice, soy honey glaze, Mint tzaki sauce and pickled cucumber salad entrée, and for dessert a Mint cucumber sorbet with mango pineapple salad on top of a mango puree and citrus shortbread cookie.
Team Two made a Tuna Tartar with Ahi Tuna and cucumber sushi as an appetizer, an entrée of Pork Tenderloin stuffed with a south west bean puree served with seared polenta cake, and warm mango, cucumber and red pepper slaw. For dessert, cucumber savory sorbet with mango and compressed honey dew salsa and sweet cucumber cake with mascarpone mousse and melon sabayon.   
Both teams did a stellar job, and the competition was very close. In the end Team 2 squeezed by with the win! Congratulations to both teams for their hard work. We saw some wonderful dishes, and a lot of dedication to the craft!

AACC Hosts Second Lady Dr. Jill Biden
Second Lady Dr. Jill Biden, joined by Education Undersecretary Martha Kanter, participated in a pastry-making class in the college's culinary arts program at HCAT Institute on Sept. 15, 2010. HCAT named an "Exemplary Program" by the ACFF
The Hotel, Culinary Arts and Tourism Institute at Anne Arundel Community College has been named an “Exemplary Program” by the American Culinary Federation Foundation (ACFF).

Honey in the Hive
Did you know that HCAT farms two successful, thriving beehives? For the past year, instructors and students in "Food Science" (HRM 210) have managed first one, then a second beehive, both on the Arnold campus. After surviving a difficult winter, HCAT hosted a honey harvest in July. Watch the Baltimore Sun's video coverage of this sweet event!

Celebrity Cook-Offs
2009 - In an entertaining and intense culinary show-down, two guest chefs competed in a one-hour mystery basket competition hosted by the HCAT Institute. This year HCAT hosted two competitions filmed for airing on cable channel 95. 
Marshall Weston, Executive Vice President, RAMEF competed head-to-head with Jeremy Parks of Jeremy Parks Company and featuring guest judges Chef Shawn Harlan, Instructional Specialist, HCAT Institute, and Kathy McArthur, Director of Instructional Finance, AA CC. The contest concluded with Jeremy Parks narrowly beating out Marshall Weston in a very close competition. 
In the second competition Loretta Haring, The Capital Newspaper, was pitted against Bill Lusby, WNAV radio. Celebrity judges included Jay Block, Law Offices of Stahl & Block, LLC, Michael Birchenall, Editor, Food Service Monthly, and Chef John Johnson, Instructional Specialist, HCAT Institute.  In another close competition Loretta Haring was crowned champion.

WJZ-TV Channel 13 cooking demos
Catch HCAT cooking demos on WJZ-TV Channel 13 on select television shows, both morning and prime time. Chef John Johnson, CEC, CCE, AAC is the featured chef for the cooking demos on the Sunday morning “On Time” news broadcast with Kai Jackson.
